Archaeological excavations reveal that wasabi has been a part of Japanese cuisine since the Late Stone Age, when it was prized for its medicinal properties. It grows naturally alongside mountain streams and is cultivated in water-soaked fields similar to rice paddies, in an extremely labor-intensive, two-year process. Wasabi is served alongside the raw fish to neutralize any unsavory aromas, enhance the appetite and even help prevent food poisoning. Aby Rosen is a world-class art collector, with a collection that spans roughly 900 works, including about 100 by Andy Warhol. Also, he has been picking up pieces from new artists, including Dan Colen, known for his graffiti-covered sculptures and canvases covered in chewing-gum, Adam McEwen and works from the Bruce High Quality Foundation, a collective based in Brooklyn.
